Oyster Shucking Station
An assortment of local and east coast oysters with assorted accompaniments, mignonettes, hot sauces, citrus and fresh horseradish.
Cold Seafood Station
Local seafood highlighted including: candied and lox style salmon, poached prawns with cocktail sauce, smoked oysters, fresh oysters, steamed mussels and seared ahi tuna.
Iberico Ham Carving Station with Charcuterie
Master carver on site with assorted charcuterie.
Mini Slider Station
AAA Local Beef: Bacon and Onion Jam, Aged Cheddar, house burger sauce, seasonal lettuce, vine ripened tomato.
Grilled Chicken: Triple Cream Brie, cranberry mustard, fig aioli, arugula, apple.
Pulled Pork: Apple and cabbage slaw, pickled onion, chipotle mayo.
Black Bean Sliders: Black bean patty with hummus, sun-dried tomato jam, arugula, tomato, red onion.
Grilled Cheese Station
Assorted bread and cheeses (aged cheddar, brie, gouda, swiss), cappicollo, ham, prosciutto, bacon, poached pear, tomato, spinach, caramelized onion, tomato jam.
Sushi Station
Assorted sushi including: nigiri, sashimi, poke and rolls.
Harvest Table
Chef’s choice of fine imported and local cured meat and specialty cheese, assorted nuts, dried fruit, fresh fruit, artisan crackers, bread, in house, foraged pickled vegetables, olives, mustards, jams and jellies.
Texas Style Smoked Meat Station
Real Applewood and Hickory smoked meat made with our signature recipes, spices and bbq sauce. What’s included: Brisket, Pulled Pork, Ribs, Quarter Chicken, Baked Beans, Buttermilk Biscuits, Slaw and Pickles.
Taco Bar
Inspired by our modern Mexican food truck, Calavera. What’s Included: Adobo chicken, pulled pork al pastor, ground beef, veggie bean crumble, shredded cabbage, pickled onions, mexican cheese blend, sautéed onions and pepper, rice, beans, tortillas, tortilla chips and an assortment of salsas, sour cream and house made hot sauces.
Mac and Cheese Bar
Fried onions, pesto, tomato jam, truffle mushroom mix, blue cheese, bread crumbs, prosciutto, chorizo, bacon.
Add Lobster, Pulled Pork or Beef Brisket.
Berry Shortcake Station
Traditional shortcakes, blackberry compote, sugar coated strawberries, macerated seasonal fruit, crème anglais, whipped cream.
Assorted Cheesecake Station
Assorted mini cheesecake squares and slices. Fresh fruit and coulis.
Pie Station
Fresh assorted seasonal pie slices and tarts.
Waffle Bar
Sugar coated strawberries, peaches, hazelnut spread, berry compote, whipped cream, maple syrup.
Chocolate Fondu Station
Modern twist with callebault chocolate, fresh fruit, profiteroles, cookie dough and cheesecake balls.
Candy Bar
Assorted candies tiered in glass votives for a whimsical self serve display. Individual candy bags and candy tongs provided.
Cereal Bar
Assorted classic cereals with cows milk, almond milk and chocolate milk. Cereal toppers: berries, banana, nuts.
S’Mores Bar
Assorted graham crackers, cookies, chocolates and marshmallows served with skewers. Roast over a safe and smokeless tabletop mini “campfire”.
